In 1918 his wife, Lady Olave Baden-Powell, took over the responsibility for the Girl Guides and thus for Brownies. Originally the girls were called Rosebuds, but were renamed by Lord Baden-Powell after the girls had complained that they didn’t like their name.

The Brownies in the Girl Guides are named after a short story by Juliana Horatia Ewing based on brownie folklore. Roman Lararium, or household shrine to the Lares, from the House of the Vettii in Pompeii. Brownies bear many similarities to the Roman Lares.

Why are they called brownies?

The first-known printed use of the word “ brownie ” to describe a dessert appeared in the 1896 version of the Boston Cooking-School Cook Book by Fannie Farmer, in reference to molasses cakes baked individually in tin molds.

The classic brownie consists of just a few ingredients: butter, sugar, chocolate, eggs, and flour. FUDGY BROWNIES (which purists often claim are the only real brownies) have a minimum of flour–about half a cup–and no leavening such as baking powder at all.

The first person to put a recipe for “brownies” in a cookbook was Fanny Farmer, who adapted her cookie recipe to be baked in a rectangular pan, in the 1896 edition of The Boston Cooking-School Cookbook. But: that recipe contained no chocolate! Farmer had basically made what we today call a Blondie.

Brownies are meant to be crisp on the outside and soft and fudgy on the inside. There’s a difference, though, between deliciously soft and downright mushy. If your brownies are too soft, the problem is likely due to improper cooking times or temperatures.

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you’re going fudgy or cakey.
