It’s a wonderful way to get a taste of the weekend on an otherwise rushed weekday morning. Here are a few tips. While I know lots of people who reheat pancakes with a toaster oven, for some reason (perhaps the fact that I don’t own a toaster oven) it took ages for it to occur to me to just use the toaster instead.
Next time you’re in the mood, make gigantic amounts of pancakes, then freeze them so you can reheat them whenever you want. Or, if you end up making too many pancakes in one batch, just toss the leftovers in the freezer for another day.
They’re wonderful with chevre and strawberry jam, or even just butter and a sprinkling of icing sugar or cinnamon. You can also use two small toaster pancakes to make incredibly cute breakfast sandwiches. (Mmm
Preheat the oven to 350oF. You can either place the desired number of frozen pancakes into a foil packet, or place pancakes in a flat layer on a sheet pan and cover the pan tightly with foil. Either way, the pancakes need to be encased in foil, otherwise they will be dry.
