SPI is one of the important soy protein products, usually containing 85%–90% protein (dry basis). Due to the complexity of production, the structure and functional properties of SPI considerably vary with the starting materials, processing variables and even the producer ( Moure, Sineiro, Domínguez, & Parajó, 2006 ). Among all the variables, pH seems to be the most one affecting the structure of soy proteins; the pH-related modifications of structure usually occur at quaternary and/or tertiary levels ( Tang, 2017 ). SG is more susceptible to pH changes than SC; once the SG was denatured, its solubility would lose ( Petruccelli & Añón, 1996; Wagner, Sorgentini, & Añón, 1996 ). Thus commercial SPI is usually poorly soluble in water ( Lee, Ryu, & Rhee, 2003 ).

The modified protein can be used alone or in combination with styrene-butadiene rubber (SBR) latex for paper coating. It has a high affinity for pigments in paper coating compositions and gives paper having good ink receptivity and printability.

SPI as a co-binder in paper coating binder formulations remains a vital part of the paper industry. Today, soy protein coatings are used in a variety of coated paper and paperboard applications. There should be steady growth in soy protein used in this application, provided SPI remains price-competitive with synthetic latex binders, which is likely, due to projected high petroleum prices relative to agricultural products.
