Can You Leave Rub On Steak Overnight?

Leaving a dry rub on a steak should not exceed more than 24 hours, as the meat will lose the juice and become dry. Steaks, which are seasoned overnight, have developed the best results, as the dry rubs penetrate deeply inside the meat and enhance a more intense flavor to the meat.

Let the steaks sit in the fridge for at least 40 minutes or overnight. Depending on how much time you have, let the rub sit on the steak for at least 40 minutes or overnight. 40 minutes will allow the salt from the rub to soak into the meat, while letting it sit overnight will allow the steak to absorb more of the flavor and spice from your rub.

Rubs can be applied as soon as a few minutes prior to grilling, but the best flavor comes as a result of letting the steaks rest, covered, in the refrigerator overnight or for at least a few hours. Let the meat come to room temperature prior to grilling it.

This will leave more of a dry bark type coating on your ribs, which would be good for a spicier mix or if you plan to add a liquid onto your ribs during the cooking process. One of the advantages of not letting the rub sit overnight on the meat is it leaves more of the original meat flavor intact.
